Zhengshan Xiao Zhong is a kind of black tea, the first in Fujian Province Paulownia area. In ancient Europe it was called Wuyi Bohea, is the world’s first black tea, also known as the progenitor of black tea, has been more than 400 years of history, from the depths of Wuyishan, Fujian province, local tea farmers in the late Ming Dynasty had the opportunity to create it. Later, Zhengshan developed Gongfu Black Tea on the basis of the quality. Tea is smoked with pine needles or Pine Wood and has a very strong aroma. Because of the smoking, the tea leaves were gray and black but the tea infusion is dark amber. The origin of the Lapsang quality is in Wuyishan City, Fujian Province China, which is a protected designation of origin.

Lapsang Souchong, aka Zheng Shan Xiao Zhong 內山小種 or 正山小種 from Xing Cun 星村, the origin, in traditional gongfu black tea style, and non-smoked, using both the Xiao Zhong cultivar and the Xiao Zhong processing technique. Zheng Shan Xiao Zhong ( zhèng•shān xiǎo•zhǒng ) 正山小種, aka Neishan Xiaozhong 內山小種, more popularly known in the West as Lapsang Souchong, Lapsang Souchong, etc origin: Wuyishan, Fujian.

“… the first black tea was not produced in Wuyi and it was not Lapsang Souchong. Neither did it precede gongfu black tea. Since black teas were originally intended for export, and the UK had a better share of them, it is fair to look at what London had to sell to understand the situation. By 1800, teashop menus, such as that of Twinning, had the higher price “congo” (or congou, i.e. traditional Gongfu black teas, not the “modernized” version of congou) and Souchongs, and no mentioning of Lapsang Souchong, or anything similar. The popularity of Lapsang Souchong happened some 60 years later. This is totally different from all those popular fables out there.”
How do I make black tea?
- According to the size of the teapot take 5-10g of tea.
- Pour boiled water and wait 10 minutes, or pour hot water into the opening of the container to cool for 5 minutes after the 90-95 degrees Celsius hot water into the teapot.
- Wake the tea / Wash the tea: Soak the tea leaves for about 5 seconds, then pour out the first infusion of water.
